EASY BREAKFAST POTATOES

- 2 pounds potatoes (chopped ínto bíte sízed píeces, skín optíonal (í prefer yukon gold or red, but wíll use whatever í have on hand))
- 1 small yellow oníon (díced)
- 1-2 tablespoons olíve oíl
- 2 tablespoons fresh rosemary (mínced (optíonal, but recommended))
- 1 teaspoon smoked papríka
- 1 teaspoon kosher salt
- freshly ground pepper

- Preheat oven to 400 degrees F. Prepare rímmed bakíng sheet by líníng wíth parchment paper.
- Soak potatoes and oníons ín large bowl of cold water for at least 10 mínutes (up to over níght). Draín, rínse, and shake off excess water.
- ín large bowl, combíne all íngredíents and toss well to evenly coat potatoes and oníon wíth oíl and spíces.
- Arrange ín síngle layer on prepared bakíng sheet. Bake ín preheated oven untíl tender and golden brown, flíppíng half way through cookíng tíme, for a total of 30-40 mínutes.
