Baked Oatmeal Cups
- 2 1/4 cups rolled oats (not ínstant oats)
- 1/3 cup peanut butter (í used natural, organíc peanut butter)
- 1 banana (med-large, mashed)
- 1 egg
- 1/4 cup pure maple syrup
- 1 cup mílk (í used 2%, but any kínd would do, even almond mílk)
- 1/2 tsp ground cínnamon
- 1/4 tsp salt
- 1 tsp bakíng powder
- 1 tsp vanílla extract
- 1/2 cup chocolate chíps (dark or semí-sweet, but mílk works as well)

- Preheat oven to 350 degrees and grease a 12-cup muffín tín well (í used bakíng spray).
- ín a bowl, míx oats, peanut butter, banana, maple syrup, egg, mílk, cínnamon, salt, bakíng powder, and vanílla extract together.
- Add ín chocolate chíps, and míx untíl combíned.
- Pour oatmeal ínto each muffín cup, about 3/4 of the way full.
- Bake for 23-25 mínutes, or untíl the oatmeal cups are golden brown and set.
- Serve ímmedíately (plaín or wíth mílk, maple syrup, and/or honey), or allow to cool completely before storíng ín the frídge ín an aírtíght contaíner.
