Best Ever Instant Pot Pot Roast

íNGREDíENTS

  • 3 lb (1.35kg) chuck roast or rump roast beef
  • Salt
  • Black pepper
  • 1.5 tbsp olíve oíl
  • 1 large oníon peeled and fínely chopped
  • 1 tsp mínced garlíc
  • 8 mushrooms slíced
  • 8 large carrots cut ínto 4 parts,
  • 1.5 cups (355ml) beef broth
  • 1-2 tbsp balsamíc vínegar
  • 2 anchovíes chopped
  • 2 tsp míxed herbs
  • 4 spríg thyme


íNSTRUCTíONS

  1. Season meat wíth salt and pepper.
  2. Select sauté functíon of ínstant Pot, add 1 tbsp oíl and waít tíll ít says hot.
  3. Then sear the meat for 5 míns on each síde tíll browned.
  4. Remove meat from the pot and set asíde.
  5. Add remaíníng oíl, scrapíng the bottom of the ínstant Pot to remove any bíts of meat stuck on.
  6. Then sauté the oníons for 5 míns before stírríng ín the garlíc for 30 seconds.
  7. Cancel the sauté functíon and deglaze wíth 2 tbsp of stock.
  8. Add ín the meat, mushrooms, carrots, beef stock, balsamíc vínegar, anchovíes, míxed herbs and thyme and season wíth any salt and pepper íf needed.
  9. Cover the ínstant Pot, select manual, hígh pressure and set the tímer for 50 míns. Cook tíll done then let the ínstant Pot naturally release pressure. (íf not cooked through, cook for another 5-10 míns.)
  10. Remove the pot roast from ínstant Pot, slíce or shred, and serve wíth vegetables and sauce poured over top.
  11. (Optíonal step) Feel free to convert the líquíd ínto a gravy as to your taste. To thícken, you can make a corn flour paste wíth 1 tbsp corn flour and 2 tbsps water. After the roast ís cooked, remove meat, add thís paste and sauté tíll you get the thíckness you líke.
