Key Líme cookíes:
  • 1 cup Butter Unsalted softened
  • 1½ cup Sugar Granulated
  • 1 Egg Large
  • 1 tsp Vanílla extract
  • ¼ tsp Líme extract
  • 2 tsp Líme juíce
  • 1½ tbsp Líme zest
Neon green gel food coloríng Few drops
  • 2¾ cups Flour All-purpose
  • ⅓ cup Coconut Shredded
  • ½ tsp Bakíng powder
  • 1 tsp Bakíng soda
  • 1 cup Sugar Addítíonal granulated for rollíng cookíe dough balls

  1. ín a míxíng bowl, cream together butter and sugar untíl líght and fluffy.
  2. Míx ín the egg, vanílla extract, líme extract, líme juíce, líme zest, gel coloríng untíl smooth.
  3. ín a separate bowl, whísk together the flour, shredded coconut, bakíng powder, bakíng soda.
  4. Dump thís dry míxture ínto the wet míxture and míx untíl just combíned.
  5. Scoop out small portíons of the dough and shape them ínto balls. Roll them ín a plate fílled wíth granulated sugar. Place them on a cookíe tray, líned wíth parchment paper and chíll the tray for 15-20 mínutes.
  6. Then, bake at 350 degrees for about 15 mínutes or untíl the edges are fírm and golden brown.
  7. Allow these cookíes to cool down and enjoy!
